Meet the Blogger

Hi!
Hi, I’m Samantha Jackson. I am originally from St. Louis, Missouri, but I was raised in Carmel, Indiana, where I graduated from Carmel High School before coming to the University of Cincinnati. I am currently in my third year, majoring in Psychology with a pre-law focus. While academics are a priority for me as an honors student, I also have a wide range of hobbies that keep me engaged outside of school.

One of my favorite pastimes is gardening with my Aerogarden, a system that allows me to grow plants using only water and plant food. This ties into my passion for cooking that led me to start a food blog aimed at helping people with dietary restrictions. You can explore my recipes on my blog here or follow along on Instagram @SoWhatCanYouEatt.

My newest hobby is something far out of my comfort zone. I have recently started snowboarding and am using it as part of a self-designed experience through the UC Honors Program, combining it with my LSAT prep. I am applying theories like Karl E. Weick’s Small Wins Theory and Albert Bandura’s Self-Efficacy Theory to balance these two activities. Stay tuned to see more, as I plan to document my journey on this blog!

With all my fun pastimes, I am most thankful for my ability to travel. As a competitive cheerleader, I had the opportunity to travel across the U.S. for competitions every month. However, I have always wanted to venture beyond the U.S. for international travel. This blog will document my journey, beginning with my first international trip to Iceland, then Belgium and the Netherlands as part of another study abroad program through the honors program I plan to take this May. My travel bucket list includes exploring places like Sweden, Thailand, Greece, Italy, and Brazil in the future.

Thank you for coming along with me on this journey!
